Â Along with making 100% in house made seed and nut mylks and we ferment our very own probiotics and ciders. From kombucha, jun and ginger beer to apple cider and beet wines. Our focus it to provide high quality organic juices from seeds to spirits.
A juicery is much more than a juice bar. We define “juice bars” as small counter service places that may be part of another establishment with a small counter and a juicer. The juices are generally made to order and are centrifuged stripping the juices of necessary nutrients.
A juicery is a dedicated business with the mission of cold pressing juices toÂ keep 100% ofÂ the nutrients intact. Juices are crafted by aÂ mixologist or “juice chef” focused on both nutritional value and optimal flavor pairings. Produce is not thrown togetherÂ for customers to hold their noses and swallow. Rather juice mocktails are crafted for both the pleasurable and healing experience of food being thy medicine.
Jun Kombucha: A probiotic fermented beverage made from organic green tea and only local raw honey varietals. Our honey vary seasonally with the transitions in flowering blossoms. This fizzy tea is fermented with the assistance of a SCOBY (symbiotic culture of beneficial bacteria and yeast). The SCOBY eats the sugars and nitrogen from the mixture creating a vinegary liquid that we then condition with fresh fruit or herb juices creating a natural soda effervescent texture. This soda we call Jun. It is a kombucha like beverage that puts good bacteria back into our gut, allowing for total nutrition of the body to become more effective once the needed workers are once again part of our internal ecosystem.
New York State labeled beer, wine & cider from our juice recipes along with Caribbean island inspired fruits, vegetables and herbs and New York City island inspired local produce. We are committed to producing New York State labeled malt and fermented beverages of 5% – 20% ABVs.
