We brew with only the best organic and naturally raised tea and raw sugar sources available. We only brew with a SCOBY and do not agree with the use of lab created probiotic powders used to replace a SCOBY or speed up the process of fermentation. If we are ever short on supply it is due to lack of quality ingredients or atmospheric fluctuations which alter the SCOBY’s ability to ferment at a steady pace.
We practice batch brewing of ourÂ probiotic sodas like Jun, Kombucha and Gingerbeer, for safety and quality control.Â Our bottled and on tap probiotic sodasÂ are bottle or keg conditioned to achieve aÂ natural effervescence.
